Let's start by clearing up what a Brookie is. It's really very simple, it's a Brownie and a Cookie, all baked together for maximum scrumptiousness. This Brookie Recipe is a bake, and even more of a delight to eat, and once you've tried it you won't ever want to go back to just lonely Brownies and Cookies again!
I first put this recipe together as a Bake Along on Facebook in Lockdown v.1 2020. It was actually the last Bake Along I did as schools were going back, and some people could go back to work, so the need for a weekly baking distraction had lessened. However, it was so successful and one of my most watched videos. But then, what can I say - Brownies and Cookies mixed together was always going to be a big hit!

You can either bake in 2 layers - a layer of cookie and a layer of brownie - I think it's best with the cookie on the bottom. Or you can do like I did and swirl it all together in the pan, like a marble cake.
I baked it for 30 minutes, but I like my cookies and brownies slightly gooey. If you're wanting something more cooked leave it in for another 5 to 10 minutes.
My usual Cookie Recipe usually calls for real block butter, as it's chilled before baking to stop it spreading. However, as this Brookie Recipe is all baked in one tin, with sides, no spreading is going to happen, so a baking spread will work just fine.

Pro-Tip
This is a great recipe for treat boxes. Mix it up with different flavour cookies dough, or add sweets and chocolate to the top.
Also, these are great for using up cookie dough that you may have in the freezer. Or batch make the cookie dough ahead of time and freeze it for whenever you have a Brookie order.
Although this Brookie Recipe is all in one here, it is actually half a Brownie Recipe and Half a Cookie Recipe. Either of which can be doubled to make a whole Brownie or a batch of cookies.

Brookie Recipe
Ingredients
Cookies
- 65 gms Butter or Baking Spread
- 100 gms Light Brown Sugar
- 1 Egg
- 150 gms Plain Flour
- 1 tspn Bicarbonate of Soda
- 50 gms Chocolate Chips
Brownie
- 100 gms Dark Chocolate
- 65 gms Butter or Baking Spread
- 110 gms Granulated Sugar
- 65 gms Plain Flour
- 0.5 tspn Baking Powder
- 1 Egg
Instructions
- Preheat your oven to 160c Fan, 180c, Gas Mark 4, 350f
- Grease and line an 8" square baking tin
Cookies
- In a bowl cream together the butter and light brown sugar
- Then beat in the egg
- Add the flour and bicarbonate of soda and mix until it's a thick dough
- Lastly mix through the chocolate chips
- Spoon balls or blobs of the mix in the baking tray and put to one side
Brownies
- Using the same bowl break the chocolate and add the butter
- Using 30 second bursts in the microwave melt the chocolate and Butter together. If you don't have a microwave you can melt in a glass bowl over a simmering pan of water
- When it's melted mix together until it's all combined and glossy
- Next add the sugar and mix through
- Then add the flour and baking powder and mix until all combined
- Lastly add the egg and mix
- Now add blobs of brownie mix to the baking tin in the gaps between the cookies dough
Bake
- Then with a palette knife, or the back of a spoon swirl the cookie and brownie dough together
- Bake for 30 minutes, or slightly longer if you prefer a better cooked brownie
- When baked remove from the oven and allow to cool in the tin for at least 15 minutes before removing and transferring to a wire rack to cool.
